Osman's Spicy Baked Fish

 This is a rough estimate of the ingredients - you may like to add or subtract the quantities.

  • Fish Fillets (Tarakihi, Snapper, Trumpeter, see in store)
  • 1Tbs fresh ginger
  • 1Tbs garlic
  • 1 Tbs vinegar (vinegar and lemon soften the flesh) 
  • 1 Tbs lemon (if you don't have lemon then just vinegar is fine)
  • few drops soya sauce 
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala or all spice 
  • salt and pepper

Create a paste with the ingredients and rub this paste onto your fish fillets pushing it into the flesh.

Leave in the fridge for 3-5 hours. Wrap the fish in foil with a few drops of oil (but not if you're cooking salmon). Cook for 10-15 mins depending on the thickness of fish. When nearly ready open the foil and grill for two minutes or so to create a crunchy top. 

NB: you can add chopped fresh mint and coriander for a more herby flavour.
