Genuine Greek Salad
  •  2 large firm Tomatoes, cut into wedges
  • 1/2 Cucumber - peeled and cut into wedges
  • 1/2 Red Onion, slice onion in half and cut half into slices
  • 1 Green Pepper, deseeded, cut in half and sliced
  • Kalamata (black) Olives, handful
  • Feta Cheese, cut into chunks (1/2 to 1 pack)
  • Decent size pinch of Dried Oregano
  • Olive Oil, to drizzle (more oil than vinegar)
  • Balsamic Vinegar, to drizzle
  • Salt 

Add first five ingredients to a bowl. Scatter chunks of cheese over the top, and sprinkle with oregano and salt. Drizzle with olive oil and vinegar to taste. Add ciabatta croutons if desired. Toss.
