SAUCE: Greek Tomato Sauce for Fish
  • 1 Onion, chopped
  • Olive Oil
  • 4 cloves Garlic, finely chopped
  • Can 400g Tomatoes or 4 chopped fresh tomatoes
  • Tablespoon Tomato Paste dissolved in 1 cup hot water
  • Half bunch Parsley, chopped (optional)
  • Salt & Pepper
Heat oil in a pan, saute the onion until golden brown, add garlic and brown. Add parsley and saute further until softened, season with salt and pepper. Then add tomatoes and cook for a few minutes before adding dissolved paste. Cook on medium heat until the sauce has reduced and thickened. 15 to 20 minutes.
