Baked Butterfish
  • Butterfish fillets (as required)
  • 1 can whole tomatoes
  • 2 onions cut into rings
  • 2 tablespoons tomato paste (dissolved in water)
  • 5 cloves crushed garlic
  • Chopped parsley (1 bunch)
  • Few sprigs of fresh thyme (optional)
  • Lemon juice
  • ½ cup Olive oil
  • Potatoes thinly sliced (as required)

Pour oil in baking dish. Place all other ingredients including potatoes in dish and bake in a preheated oven for approx. 15 mins. Add fish fillets, scooping some of the sauce over the top. Continue baking for a further 15 – 20 mins or until potatoes and fish are cooked.  Enjoy!
