Baked Scallops
  • 12 Scallops (or less if preferred) 6 cloves Garlic, chopped
  • Extra Virgin Olive Oil for frying
  • 3 Tbsp Butter
  • 2-3 Tbsp plain Flour
  • 1-2 cups Milk (approx.)
  • 1 cup grated Mature Cheddar or Tasty
  • Breadcrumbs for sprinkling on top

In a large fry pan, heat the olive oil. Add garlic and fry until golden. Add scallops and cook lightly on both sides. Remove from pan and place in a deep baking dish.

In a medium sized pot, melt butter and stir in the flour. Fry until flour absorbs the butter and turns into a thick paste. Add one cup of milk, salt and pepper. Reduce heat. Using a whisk, whisk until sauce thickens. Add more milk as required. However, do not thin out too much – the sauce should be quite thick.

When ready, remove from heat and add half of the cheese. Pour sauce over the scallops. Add remainder of the grated cheese and sprinkle the breadcrumbs over the top. Melt more butter and pour on the breadcrumbs. Bake in a pre-heated oven (200˚) until top browns and crisps up.
