Greek Fish Wraps
Kids love 'em!
 
This is a fun recipe for the big kids to cook or for you to all cook together...
 
With this recipe you can pan fry the crumbed fish in olive oil or keep it lower fat and grill:

  • 700g skinless white fish fillet, cut into strips
  • 2 egg whites, beaten with a fork
  • 100g coarse fresh breadcrumbs, seasoned with salt & pepper
  • 1 Lime, zest & juice
  • Olive Oil spray
  • 6-8 Tortillas, small size
  • John's Fish Market Homemade Tzatziki
  • Salad - mesclun, rocket, butter lettuce or iceberg lettuce, strips of carrot, spring onion, cherry tomatoes (you choose!)

Squeeze lime juice & sprinkle zest over the fish. Dip the strips into the egg white, then dip and coat with seasoned breadcrumbs. 

You can either:
 
add olive oil to a fry pan to totally cover the pan and heat to medium-high. Fry the fish in batches till golden.
 
OR
 
spray the fish with oil and place on a baking sheet. Grill for 2-3 minutes then turn, spray on more oil and grill for a further 2-3 minutes till golden.
 
To Assemble: 
Warm the tortillas. Place the salad, fish and tzatziki on the top part of the tortilla, drizzle lime juice over, fold the bottom of the tortilla over the fish/salad and then fold the sides over.
