Brunch Prawn & Avocado Tortillas
Serves: 4
  • 4 tortillas
  • 8 Prawns, peeled & cooked (see in store)
  • 1/2 cup shredded mozzarella
  • 4 eggs
  • Olive oil
  • 6 cherry tomatoes, cut in half
  • 1 avocado, sliced
  • 1/4 lime wedge
  • salt and pepper to taste

Slightly toast tortillas in a fry pan or oven, add mozzarella on each before remvoving from pan or oven to slightly melt cheese. Place each tortiilla on a separate plate. 
Beat eggs in a small bowl. Heat olive oil in the fry pan, stir fry eggs, then divide the eggs and place on each tortilla, let the heat of the egg melt the cheese some more.
Then top with tomato, avocado and shrimp. Drizzle with lime juice, sprinkle with salt and pepper. Serve immediately.
