Lemon & Garlic Prawns on Crisp Rosti
  • 12 large Shore Mariner Raw Prawn Cutlets, defrosted and drained (see in store)
  • 3 medium potatoes
  • 2 Tblsp fresh chopped dill
  • salt & pepper
  • 2 Tblsp olive oil
  • 2 Tblsp butter
  • 4 cloves crushed garlic
  • 1 small lemon thinly sliced
  • 1 lime thinly sliced
  • 1 Tblsp honey
  • juice of ½ lemon
  • ½ cup fresh basil leaves
  1. Grate potatoes and squeeze out the water. Chop the dill and add to the potato. Season well with salt and pepper.
  2. Pour the oil into a hot pan, spoon in the rosti mix and gently cook until golden brown on both sides, set aside in a warm oven.
  3. Heat the butter in the pan, add garlic, add the Prawn Cutlets and cook quickly. Add the lemon and lime slices, honey and lemon juice.
  4. Arrange prawns and cooked lemon and lime slices on top of the rosti, pour sauce around the edge of the plate and garnish with the basil leaves.
