Pine Nut, Basil & Parmesan Topping


  • 1 tsp minced garlic (1-2 garlic cloves)
  • 3 Tbsp Pine Nuts
  • 1-2 tsp Basil Pesto (bought)
  • 2 Tbsp Parmesan Cheese
  • 2 Tbsps Mayonnaise


Mash the pine nuts and garlic in a mortar and pestle or under a wide knife. Mix together with the other ingredients.

Coat your fave fillets (at room temp) with the topping and bake in the oven for approx 10-15 minutes.
