Easy Marinades for Fish

Depending on the flavour (French, Thai, Chinese, Indonesian...) marinades can include:

 

  • oil (infuses the flavours) 
  • salt, pepper
  • chopped tomatoes
  • red wine vinegar (perfect drizzled on salmon then grilled)
  • lemon juice (a perfect match with herbs)
  • lime juice
  • herbs (thyme, basil, tarragon, parsley, cumin, rosemary, dill, fennel)
  • vermouth (perfect with citrus or try vermouth with dill or tarragon, mustard, brown sugar, lemon juice, onion, oil)
  • white wine (perfect with lemon & dijon mustard)
  • soya sauce
  • ginger (add garlic, soy sauce, spring onions, Chinese wine)
  • honey
  • garlic (with rosemary & lemon is a winner)
  • Chili (with orange and thyme adds a pow)
  • Coriander (with lime and garlic is perfect with fish)
  • Apple Cider Vinegar (good for you and goes well with cumin)
Don't marinade your fish for too long or it will toughen - around 30 minutes should be fine!
