Easy Spanish Baked Fish
  • 1 kg Fish Fillets: Hake, Trevally, Alfonsino, Butterfish, Gurnard, Ling, Moki (see A guide to cooking fish)
  • 2  onions, sliced
  • 3, potatoes, sliced
  • 4 Tbsp Olive Oil (see in store)
  • 1 Tsp Olive Oil
  • Fresh Parsley, chopped
  • 1 or 2 Lemons, juiced
  • Salt & Pepper

Heat the olive oil in a fry pan and add the onions, cook slowly and add the potatoes. Add a dash of salt. Cook over a low heat for 15 minutes until potatoes are nearly soft.

Preheat the oven to 180C. Sprinkle olive oil in a baking pan and place the potatoes and onions in the pan with the washed fillets on top. Add desired salt, pepper, lemon juice and the parsley.
 
Bake for 15 minutes or until the fish is cooked through.

Serve with cherry tomatoes.
