Easy Pan-Fried Sole Fillets With Greek Potatoes
  • Sole Fillets (see in store)
  • Olive Oil
  • Butter
  • Salt & Pepper
  • Flour
 
Wash the fillets then toss in seasoned flour. Heat a large fry pan (big enough for all of your fillets) with enough olive oil to cover the pan. Place all of the fillets in the pan and cook one side for a few minutes then turn. Add a dollop or two of butter and stir around the fillets while they cook for another minute or so, and turn, until both sides are golden.

Remove the pan from the heat and squeeze lemon juice over the fish.
