Crumbed Hoki with Parmesan and Herbs

We love Panko Breadcrumbs - they are nice and crunchy! This is a firm favourite family recipe because Hoki has a lovely soft flaky texture with a sweet taste (and it's a very economical fillet!)

We'll leave the quantities up to you.... 

Combine parmesan cheese, celery salt, black pepper, lemon zest and your fave dried herbs (e.g. Basil, Thyme).

Combine enough milk and your fave mayonnaise for a dip for the fillets.

Dip the washed Hoki fillets in flour then in the milk/mayo dip and then through the panko crumb mixture.

Spray each side of the crumbed fillets with olive oil and place on baking paper in an oven dish and bake for approximately 20 minutes.

Serve with slices of lemon and rocket (or mashed kumara and peas).
