Spanish Baked Fish

 

  • 4 medium fish fillets (Tarakihi, Gurnard, Moki, Warehou, etc)
  • 1 tsp salt
  • 1 tsp paprika
  • ½ tsp black pepper, ground
  • 1 green pepper, cored and ringed
  • 1 large tomato, sliced
  • 1 onion, sliced
  • 2 dozen (or more) black olives
  • 2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • Lemon wedges

 

  1. Preheat oven to 190ºC.
  2. Place the fillets in a baking dish that has a lid.
  3. Sprinkle the fish with salt, paprika and pepper then top with the green pepper, tomato slices, onions and black olives.
  4. Mix the lemon juice, olive oil and garlic together and pour over the fish.
  5. Cover with a lid and bake for 15 minutes then uncover and bake for a further 10 minutes until the fish is flaky.
  6. Serve with the lemon wedges.
