Fish Pie

  A meal in one and so economical! 

  • 3 - 4 Red Cod Fillets (or Hoki)
  • 300g John’s Smoked Salmon (break apart from skin)
  • 300g Raw Prawn Cutlets (tails removed)
  • 1 Spring Onion (finely chopped)
  • Mixed Vegetables
  • ½ Litre of Milk
  • Handful of Finely Chopped Parsley
  • 4 – 5 Potatoes (cut into small cubes)
  • 200gr (approx) Butter
  • ¾ cup (approx.) Flour
  • Salt & Pepper
  • Grated Cheese (optional)

 

Wash the Red Cod Fillets and remove any bone.  Poach in the milk until half cooked.  Strain the mixture, separating the milk from the fish.  Keep the milk, as this will be used for the white sauce. 

Finely chop the spring onion.  Melt ½ the butter in a saucepan and fry the spring onion.  Add the flour and sauté until butter is fully absorbed.  Add the milk slowly and whisk until thickened.  Season with salt & pepper. 

In the meantime, you will have boiled the potatoes and turned them into mashed potato (adding the remainder of the butter and some milk, salt & pepper).  

Mix the fish, prawn cutlets (tail removed), vegetables and smoked salmon into the white sauce and pour in a baking dish.  Spread the mashed potato over the top and bake until brown (grated cheese is an option).
