Slow Cooker Citrus Fish Fillets
Slow cookers and crockpots are your close friend and perfect for busy people.This is a delicious zesty meal that is so easy and just about cooks itself!
  • 700g fish fillets - firm and thick (Moki, Monkfish, Ling, Groper, see in store)
  • 1 Onion, chopped
  • Handful of chopped fresh parsley
  • Couple of sloshes of olive oil
  • 100g butter
  • 1-2 Tbsp lemon zest (grated outer peel)
  • 1-2 Tbsp orange zest (grated outer peel)
  • salt and pepper
  • orange and lemon slices

Spray or coat the bottom and sides of a crockpot or slow cooker with some olive oil and butter. In a frypan fry the onion and chopped parsley in the remaining butter and oil until onion is soft.
Place fish in the slow cooker and season with salt and pepper and top with the the onion/parsley mixture and sprinkle over the lemon and orange zest.
Cover and cook on the low setting for approx 1.5 hours until the fish is flakey.
Serve with rice and salad garnished with orange and lemon slices. Serves 4. Enjoy!
