Spinach and Prawn Bake
Prawns are easy to prepare and like most seafood, do not take long to cook. 
 
  • 2 kgs Spinach leaves, slightly blanched
  • 1/2 kg whole raw peeled Prawns, slightly blanched (any size, see in store)
  • 1 Onion, fried in Olive Oil and softened
  • 4 Tbsp Butter
  • 4 Tbsp Flour
  • 3 Cups Milk
  • 1/4 Cup Cream
  • Cheeses of varying types, e.g. Cheddar, Feta, Parmesan
 
To make the White Sauce 
 
In a saucepan, melt the butter. Add the flour and stir to form a paste. Add Milk and cream slowly, stirring constantly with a whisk to prevent lumps from forming. Simmer until sauce thickens. Season to taste. The sauce should be quite thick in consistency. Set aside.
 
Drain the blanched spinach well and arrange in a baking dish. Add the cooked onion and a layer of the grated cheeses of your choice. Then add the sauce, a layer of prawns and the remainder of the sauce and cheese.
 
Bake in a pre-heated oven (200C) until sauce browns on the top (approximately 10 mins).
 
This dish is truly scrumptious and should be eaten on its own, or with a slice of bread. Enjoy!
