Skate Wings with Soy Sauce
Skate belongs to the family of Rays. It's flesh is moist, flaky and very delicate. Soft bone runs through the entire surface of a skate wing and can be eaten. This bone contains high levels of calcium. Skate is very popular in Chinese cooking.
 
  • Olive Oil for frying
  • 2 Tablespoons Sugar
  • 1 Skate Wing, washed and sliced
  • Soy Sauce
  • 1 Spring Onion, chopped
 
Add oil to frying pan and heat. Add sugar and stir until sugar turns brown. Add the Skate and fry until the Skate furns white with a golden edge. Add a small amount of soy sauce and remove from heat. Add spring onion and serve with steamed rice.
 
NB:  Prawns and Conger Eell (cut into cubes) can also be used instead of Skate.
