SIDE DISH: Greek Okra and Tomato
This is a perfect side dish for seared Tuna, baked Tarakihi, panfried Butterfish...you name it!
 
Ingredients:
Okra
Malt Vinegar
Olive Oil
Onion
Garlic
Potatoes
parsley
Tomatoes
Maggi Vege Stock Cube 
Water
Salt and Pepper 
 
Cut the stalks off the Okra. Drizzle malt vinegar over the Okra and leave overnight.
 
In a reasonably hot fry pan heat olive oil and fry sliced onion and garlic till soft. Next add Okra, peeled potatoes (chopped in 4), thickly choped parsley and tomatoes (canned are fine). Season to taste.
 
Turn down the heat and simmer. While simmering and as liquid decreases add a Maggi vege stock cube dissolved in water. 
 
Simmer till potato is soft and flavours have mingled. Season to taste.
