How To Marinate Fish


Fish is delicious marinated, it adds flavour and moisture to the flesh.

But don’t marinate for too long. Any longer than 30 minutes and the acid affects the delicate protein of the fish and you end up with a mushy consistency.

For the richer denser fleshed salmon and tuna you can marinate for up to an hour.

Marinades can include

  • oil
  • chopped tomatoes
  • red wine vinegar
  • lemon juice
  • miso  
  • herbs (thyme, basil, parsley)
  • vermouth
  • white wine
  • soya sauce
  • ginger
